Here's a short spiel:
Keep in mind no camera sensor can capture a large range of different values in any given scene, so the automatic aperture + white balance adjustments that the camera makes are all trying to work together to capture as much as they can. So especially in low light, or with a very dark or very bright image, the camera tries to stretch out its sensor rage as much as possible, in some cases amplifying slight color differences and blowing them out. The algorithm isn't very smart, nor very adaptive. Cameras usually have limited processing power on board...
