Not to speak for the designer, but I think one of the limitations is the dearth of detailed plans for the various other ships in the series. Personally, I'd like to see a Canterbury, but there aren't many good and detailed images of it online.

Not at the moment... the great thing about the Roci is that the design is relatively clean, so really easy to make a paper model from. Other ships in the Expanse universe have more "greeble" on them - exposed conduits and open bays and such - that makes it almost impossible to model them accurately.
Then there's the the difficulty of having to invent all the missing details that us viewers are unable to see on the show or the few schematics that were released; it's simply too much effort. Even the Roci took months to finish (I only have a limited amount of energy for this outside work).

So...those geniuses who think we want films like Lavalantula and Sharknado
have cancelled The Expanse.
SyFy has dropped the show after this Season 3.

Seems their intelligence matches the silly spelling of their name.

Luckily, Amazon has picked up the show for Season 4.
