BTW, Kevin WS mentioned “golden caster sugar” which is a type of sugar almost unknown in the USA. I had to buy “Domino Quick Dissolving Superfine” white sugar, equivalent to white caster sugar, from a specialty cake baking supply company when I needed caster sugar for a recipe. “Granulated sugar” and “powdered sugar” are common in the USA, but neither is equivalent to caster sugar.

I don't have butter, and stores are closed tomorrow, I will see if coconut oil will substitute. The bag says pancake mix, and the instructions printed on it are truly minimal, just listing the basic ingredients, no amounts, and no mention of whether to do the cooking in an oven on a cookie sheet or on the stove top in a frying pan.

I have a small bag of powdered maple sugar which I will use instead of caster sugar.

I think I will try a variation on Kevin's recipe, I like the idea of adding another egg.

I have never heard of an oven-baked pancake. Cooking on a griddle is best. If you do not have one, use the largest skillet you own on the stove top

Have you called the person who gifted you the flour and asked them how they usually make them?

Murphy - you were spot on.

Annie - well picked up on the sugar.

Any fine suger. And normal sugar will suffice.

For the flour, plain flour. Or cake flour. Or strong flour. Not self rising or bread flour.

If the bag says Pancake Mix all you may need to add is water. If you have a brand just Google it, they will probably have instructions/recipes.

Check the ingredients list. If it contains such things as baking soda (bicarbonate of soda) and other things, it's pancake mix. What color is the bag? Usually plain flour comes in a white or tan bag.

I haven't been to every grocery store, but that's a common item. Plastic 12-ounce container. Used to be in a bigger box and considerably cheaper.

Nowadays I just give regular sugar a ride in the blender. For golden caster, I use unrefined sugar in the blender. I can find imported caster sugar in the Euro section of my local Wegmans, but I realize that not everyone has that advantage. Amazon has a variety, but much pricier than using my blender on Domino or Sugar In the Raw.

Sugar is sugar really - a blender is fine, or use the sugar as is.....

I actually use castor sugar sometimes, but more often as not coarse brown sugar for everything regardless, as that's all we have in the house!

All the older recipes just say sugar!
