If the Instructions and Model are two separate files, cover art can be the first page of the model and portrait. I doubt that would be a problem. Many of the models I've done have separate instruction files, but I just threw that out there

Separate files are a problem.
I personally don't like kits that come as a Folder, with multiple files in them. You have to find and open multiple files. Files get lost. It makes the whole download package a lot bigger. I think my kits will always be a single PDF, no matter how I have to package them. ... I just did a test PDF with both portrait and landscape pages. [attached] I wanted to see, if by default, it was viewable with the correct page orientation. It is...on my system. Does it work on yours? Would the idea of Landscape instructs appeal to you? Would it serve any purpose or add anything to the kit? Or, should I just stick with the current Portrait page orientation?

Foxit correctly orientates the pages. First page portrait, second page landscape.

Dave, your type font choises (mustang, koolwheelz)are alright. No need to change it, all clear and easy to read.

So, what are your opinions... Would the idea of Landscape Instruction pages appeal to you? Would it serve any purpose or add anything to the kit? Or, should I just leave well enough alone and stick with Portrait page orientation?

I like the idea of landscape pages. Perhaps a test of 5 or 6 pages so we could get an idea of what it would be like. I don't think it would add anything to the kit per se; it would just be something different.

I prefer the portrait orientation, because when you are scanning through the kit you don't have to resize the paper to fit the margins of the reader to look at the parts after skimming through the instructions.

okay...I downloaded the above attachment, saved it to my desktop.
Opened it, as a PDF, in Acrobat....thats my default PDF viewer. Two pages, first Portrait, second Landscape view. I hit the PRINT button. Docker opens...I made no changes to the settings. I assume these are all default settings. "Auto rotate and center" is active...I think thats the important one. I said "okay" to print... Got two sheets...the first is Portrait, and the second is Landscape printed. Success. ... So now, I need to lay out some Portrait and Landscape Instruction pages. See what works best for me within the context of the artwork layout. If I decide to go with landscape pages (just for the Instructions), I'll try to post a test set of pages for you to try.
