Though I see lots of aviation so far in this thread.
I have a few things I would love to see.

A Seawolf submarine specifically the Jimmy Carter variant.
An EC-130H - variant on the C-130
All of the Indian rockets, preferably in 1/96 or thereabouts.

I guess I'll stick my vote in again for some early ground vehicles: horseless carriages, brass-era cars, early trucks, tractors and crawlers.

I'd love to see a von Braun "Bottle Suit" space vehicle. Even with simplified, flat "arms".

I would love to see a Large Hadron Collider diarama depicting the main experiments. I also think a nice DNA double helix model would be great-- preferably at a nice desk model size.

An accurate and detailed Fordson Model F in 24/25th scale. One of the early big prairie tractors, steam or ic in 24/25th. Showman's Steam Traction Engine (Garrett or Burrell) in 24/25th.
