Visited an exhibition of paper art in Holland last year, where birds like those were only one of a large number of items of paper art. Fascinating. Search Google Images for Coda Museum, Apeldoorn, Holland.

The way she builds up the internal shape and structure is interesting. I wonder if it leaves the model birds somewhat soft and compliant like the real thing, compared to the more boxy construction with formers and tubes that you see in aircraft models.
