One of my quick emergency stand-by's is a quick basic White Irish Soda Bread (only 4 ingredients).

Takes 10 minutes to mix up and prepare, and 30 minutes to bake.

Pictures 1 to 3 - Makes a nice loaf, even though it is always very pale and anaemic in appearance!

Picture 4 - Good for breakfast toasted with a strong cheddar, Ploughmans Pickle and onions.

Bagels...sort of

Lately, I have been playing around with an "easy" bagel recipe. No yeast, and only four initial ingredients.

I, however, experiment with it. I have done caramelized onion, everything, jalapeno cheddar,
pumpkin spice with cinnamon cream cheese, hatch green chile with green chile cream cheese, and today,
orange cranberry with cinnamon orange cream cheese. They are then baked in an air fryer/convection oven.

I've been baking bread consistantly for about five years now and rarely if ever buy it from stores. My favourite loaf is about 80% white bread flour and 20% rye or spelt which produces a more nutty flavour, enhanced by adding seeds into the crust. Recently been doing pizza from scratch using a cast iron pan and the grill to get higher temperatures than a home oven.
