They probably were much darker indeed, but once I had a good but light colour I resisted the urge of further darkening it. The light colour does bring out planking and framing details, which are very nicely designed in this model.

In lieu of painting the hull planks would it be possible to laminate the planks with a wood pattern printed on 20lb/75gm stock? Would the extra thickness create fit issues?

The reason I ask is I was drawn to paper modeling because I really do not paint well, and usually the pattern and color is already printed on the parts so there is little or no painting to be done.

I wouldn't do that - you would lose the benefit of the lasercut parts. The fit of the parts may very well be affected.
I am no master painter myself, but trying out the painting method as described by Shipyard works quite well. But practice on spare paper first!

These are some details of the model that I really like. It gives a great impression of the frames in the original ship.
I've coated the hull in transparent wood varnish. I didn't want to use a darker shade, as I'm afraid I won't have control over colour variations.

The way the planking is done seems similar to the methods the wood model builders use.
