I am the father of a three year old girl who has suddenly discovered she LOVES aeroplanes - paper seems like a suitably cheap source of toys
... and fun for me to make

Chris, Welcome to the fold. Be careful this hobby can be very addictive and hard to cure.
Please ask questions and show what you have built. it does not have to be a show stopper model we enjoy seeing all paper models.

I will Years ago I made some boat hulls from normal photocopy paper to test the idea of "Origami Steel boat building" which I had been reading about. It worked very well and made surprisingly strong structures. I also had fun doing it. Those basic models got lost many moves ago, so I can't show them :(
