Yes, the cover is easy to remove, and the other cover too. The air intake is prepared to remove because Marcin Kudeslki, the model creator say in the model book...

“it can be glued, but if the engine is done nicely it is a pity to keep it under cover.”

… and certainly we all agree with him.

does the adding all the paint make the whole structure any stiffer and/or sturdier?

Yes a little more stiffer but not much, isn’t relevante.

don't you have any problems fitting parts on to the already painted sections?

I only add parts to other already painted when the parts are different colors.
When glue a part in a white glue mark and that mark has much ink, I remove some ink with a x-acto knive.
But when I glued the lettering in the engine cover I glued over the ink.

since you paint the model how you take care of the printed details like logos and lettering.

Before begin the model I see all lettering and logos and draw all in CorelDraw, then print and cut. I cut two or three letters for each one I need for a better selection.
This method is better than a scan, the image is more clean.

I like your choice of not dirtying or mudding the model too much.

Some people like to put much weathering, other like do not put any, I like put some to give an idea of use but without distorting the original model.
I accept all positions, in this case I’m not a purist.
But I have built models without paint and in this cases I’m a purist.
I choice if paint or not depending on the model type and of its original color.

I’m not agree that a modeler make only painted models or only unpainted models, or only aircraft, or only armored ...
A bit of everything depending on the desire of the moment.
As said sjsquirrel in previous post, one of advantage of paper models is that “covering every subject under the sun”.
So! Why make every time the same?
