Until now, I keep them all in more or less good condition, as display pieces. On some models, sometimes a part falls apart. If I have a space problem and am not interested in that particular model anymore, it gets thrown away. (This works only for paper models as I can build them again more easily).
In general, I find designing, building and photographing much more pleasant than looking at the finished product.
And for big models: I don't care if I have enough room for them before they are finished. Until now, I always found a place for them (with the Zeppelin being the first hanging from my ceiling), but if I don't, I would either disassemble it partially or throw it away after the pictures are shot.
