On non assembled sheets I use deluted nitro based varnish, normally used for wood impregnation. Straight from the can, one layer with soft 2inch artistic brush for that. But you can't use this stuff for inkjet printed models (your printed colors will blend) - for that just one layer of acrylic glossy spray.
On finished model: two coats of clear glossy acrylic varnish from spray can, and after that one or two coats of matt or satin varnish, depending on what look you want to achieve on your model.
