Some people paint it as Camouflage Gray (myself for one. A "warm" shade of gray), others paint it Light Ghost Gray (I think that is too "cool" of a color, but others go with that).

There is still a bit of a debate as to the TOS E's base color. It's kind of up in the air so to speak. ...Cheers

I just wanted to recommend this article if you haven't seen it yet on the CultTVman website.

What Color Is The Classic Enterprise? by Paul M. Newitt

This gentleman wrote model kit assembly manuals in the 1970's on the old AMT Star Trek plastic hobby kits. He has also worked in Hollywood. I think this might nail down the color of the classic Enterprise model. You might find it helpful.
