I advocate using that thickness of paper but gluing an additional backing layer, which also serves as glue tabs. For gentle curves it's fine to just glue together and shape but for tighter curves pre-shaping the two layers before glue will make the 'sandwich' avoid wrinkles and keep the shape more firmly.

Goes without saying that internal formers found in more complex kits help with shaping - but the trade off is more complexity.

Other than that, having a few shaping tools to hand is useful - cake decorators, tootpicks, dead ballpoint pens, tweezers etc.

I use 176 g/sqm for models sized about 1:72 (likely a bit bigger). Get few sheets and try. No harm can be done.

If postage wasn't insanely pricy I could trade you some of mine for some of yours. Where I am I can't find 120-140 g/sqm paper. Even 176 is getting hard to find and last box I got from Amazon.

Here's the F-5 with all flying surfaces attached to the fuselage.
I will probably not continue it (gears and weapon pylons), as the current result is not good. I'll count it as a learning experience.
Next model will be a FiddlersGreen model. I alternate between SnP and FG.
