If you're interested in the MiG-21, there's this huge book (720 pages) by Yefim Gordon and Keith Dexter from Midland Publishing. Lots of info, lots of 3-view drawings, lots of profiles. It covers also the early prototypes (Ye-2 etc...) and the chinese derivatives (didn't know they reverse engineered the MiG-21 MF).

Yefim Gordon also wrote a 500 pages tome about the MiG-29 for the same publisher.

He has actually written a lot of books about russian and chinese aircraft.

Well in that case here are a few suggestions: the Kenneth Munson series is a "classic" place to start (I have them all), the Aero Publisher series by Lloyd Jones is another classic, if you can find it, The Great Book of WWII Airplanes is incredible with illustrations by Watanabe, and Warplanes of the Third Reich by Green cannot be equaled.
