In what has become a Friday night tradition for my wife and I, it's pizza night.
For her, there is the Hawaiian. Ham, onion, spinach, mozz pearls, Italian blend cheese, and pineapple.
It's her fave, so I make it for her.
I try and do a different one each week. This one used a pesto sauce base, Italian sausage crumbles,
the aforementioned cheese, mushrooms, slivered onion and sun dried tomatoes.
This is done out on my smoker grill. I do use a smoke tray for extra wood fired flavor.
Another good cook in the books.

Pulled Pork BBQ pizza, last nights offering, cooked out on my Traeger smoker grill.
Utilized a couple of new toys to raise the temperature. A Smokedaddy sear station,
and a high temp fibrament pizza stone. Even at cold temps, I got the stone up to 500F.
Pizza had a custom bbq sauce, smoked pulled pork I had made previously, cheese of course, and pepperoncini peppers.
Nice crispy bottom crust, tender inside.

Ahh,my favorite kind of food. Fond memories of pizza and beer boxes, movie marathons with friends and time wasted in school.
Today I enjoy pierogies. Much easier to keep my intake in check.

Here's one from last month I forgot to post.
"Meatzilla". An eight meat pie, using pepperoni, Italian sausage,
genoa salami, hard salami, meatball, ham, bacon, and chorizo.
I could feel my arteries clogging just building it! But oh so tasty.

This Fridays pie, a Chicago style sausage/pepperoni deep dish.
Using an 8" cake pan, I pressed in the dough. Then
layered in sandwich sliced mozz, leaving about 1/2" of
cheese on the sides of the pan (makes a tasty crunch of cheese!),
Layered in the sausage and pepperoni, topped that with the sauce
and some extra cheese, mushrooms and red onion slivers.

Fired the Traeger up to 405F put the deep dish in and cooked for 40 min with
some extra smoke from the smoke tube, plus or minus a couple.

Last month, my youngest took a road trip to visit his brother on his birthday. They had eaten at a place
called Gumbys, and had a "Stoner pie". Tonight, that was his choice for dinner. So I obliged him, using my Traeger.

It has pepperoni, bacon, cheese sticks, french fries, mozz balls, cheddar and other cheeses. This was one
heavy pie! Way to many carbs for moi to inhale. This was large enough, he could only eat half a pie!

Mission accomplished!
