My contribution - smashed cucumber pickles, ready in two hours, Tasty, if lacking in the probiotic benefits of lacto-fermented pickles like Doug is making.

In any event, it's fun to watch Jess Kapadia smashing those cucumbers.

I didn't realize that this topic would bring in so much additional info.


We also do 'refrigerator pickles', similar to Don's post, but a bit more sugar in the brine. Instead of smashing, we slice thin along with thin sliced sweet red onions, adding enough brine to allow them to float.


Funny thing. My mom and my aunts had quite the tussle over my grandmother's pickling crocks, but none of them have any inclination to do the true old-fashioned fermented pickles. I'd like to try my hand at them at least once

I made some of that cucumber and onion salad that I liked on the ships. You slice cucumbers and sweet onions, cover them with some flavored brine and let it sit in the refrigerator for a couple of days. Very good.

Exactly, Ray. I do that, too. My folks don't care for it, so only at my house.


I cooked up some rotini, drained it and then chilled it. Mixed it with my cucumber, onion and tomato concoction and took it to a family reunion. Didn't bring any home, so I think it must have been acceptable

Opened a jar of the pickles. It was the one with the wedges. Taste real good. It is a good sign that the strips and medallions will be good also.

My wife used to make Pickles sometimes she would flavor then with Koolaid. I must say they were very good and the kids loved them.
