Bacon-Cheese Gougères

Here is something I baked called Bacon-Cheese Gougères. They have bacon, aged white cheddar, and Gruyère cheese. One stick of butter for 12, got real fluffy. Taste fantastic. (bacon, right?)

Gougères!

Gougères!

Served warm at wine tastings in France and as Holdiay hors d' ouvres in the California wine country. I make mine with Point Reyes Blue Cheese made by The Giacomini Family, third generation dairy farmers in West Marin, CA, who've been making farmstead cheese since 1959.

I got hooked on this cheese in the 80's and have been a strict devotee ever since. A Blue Cheese Salad Dressing on fresh Romaine Lettuce with specially prepared Garlic Pain a' Levain Croutons with Fresh Bay Shrimp is "Your Friend" as Stephen King says...,

Gil, I realy like blue cheese. Crumbled in a salad, blue cheese dressing, on top of a grilled steak, etc. etc..

Next time I make gougères I am going to experiment with different cheeses, blue cheese being one of them.
