I know exactly how you feel. I have a stash of WW1 plastic aircraft that I just love working on, but one day I thought I would look for something a bit more chalenging. I have only been building paper for about seven months now, but I'm totaly addicted. I thought that it was way cool that instead of simply cutting a plastic part off a sprew, why not "manufacture" the part. Add to my skill level, and get a great understanding of the geometry involved and how the parts are actualy constructed. Once you understand how your plastic parts look like flatened out in paper then going back to plastic now I have a much better understanding of how to reshape and modify the plastic parts. Only I realy like holding sissers and knifes, and it also makes my wife a little itchy that I have a blade in my hand all the time now. So, all positive aspects of paper model building. We just know you'll have a great time with this, so have fun and show us your first model soon.

I'd start with something free. Something not overly complex. By registering at https://www.fiddlersgreen.net/ you get three free models to get you hooked. Most of these are somewhat simplified, but build up very well.
Scott also has another site, Paper Model Airplanes, where he rotates through a model a day for a total of 12 models. My first aircraft was from Paragon, Home - Paragon Cardmodels If you have difficulty in avoiding creases and getting smooth curves, do some of the small Canon animals.
